Head Chef
Uenishi Yasufumi

Our head chef has been working in Kyoto for more than 40 years. His passions are informing the world about the wonders of Kyoto cuisine and serving guests with hospitality.
He makes his own miso paste and sashimi soy sauce and has received his qualification from the Ikama School Ceremonial Knife Skills (Ikama-ryu shiki-hocho), which is considered to be the ultimate in fine slicing techniques. He was appointed the head chef of Kyo Kappo Higashiyama for the high acclaim he has received for his knowledge and expertise.
